The wife of a diplomat who was forced into exile after Pol Pot invaded Cambodia, De Monteiro escaped to France, where she established what may have been the first Cambodian restaurant in the Western world. She then moved to the United States and opened The Elephant Walk. Less salty than Vietnamese food, less sweet than Thai, and subtler than both, Cambodian dishes feature a rich interweaving of cultural influences and fresh, light flavors. Some of the recipes in the book, like Catfish with Coconut Milk and Red Chilies, were created in the kitchens of Cambodian aristocrats, while others, like Stuffed Cabbage with Lemongrass, have simpler origins.

The Elephant Walk Cookbook, the first volume of traditional Cambodian cooking published in the U.S., is a cultural as well as a culinary adventure. It's also the story of author Longteine De Monteiro and how she and her husband were forced into exile in 1975 by the Khmer Rouge takeover of Cambodia and eventually came to own three restaurants and a market in and around Boston. An important reason she wrote this book--with Katherine Neustadt--was to preserve traditional dishes that now may no longer be served in Cambodia because everyone who knew how to make them was exterminated by the Khmer Rouge, or fled elsewhere.

Cambodian cooking blends influences from Asia and the West, including China, Vietnam, Thailand, India, Spain, and France. It is a balancing act of colors, textures, and most of all, salty, sour, sweet, hot, and bitter flavors. Rice and fish are important, particularly freshwater-lake fish and a fermented fish paste, prahok. So are coconut milk, lemongrass, and a list of other ingredients that are becoming more readily available outside of Southwest Asia. Still, ordering by mail from sources provided in the book--or a special shopping trip--will be necessary to make most of the dishes in The Elephant Walk Cookbook.

The most accessible dishes are the salads (many of which contain chicken or pork), including Tomato Salad and Pineapple Salad, and the pickles, such as Mixed Vegetable Pickles. Loc Lac--beef marinated in mushroom soy sauce, sautéed, and served on crisp lettuce with lime juice--is another easy choice. Loving, lively descriptions and alluring photos will keep you reading about all of the 150 dishes, which are aromatic with basil and cilantro, galangal, kaffir lime and curry leaves, tamarind, fiery chiles, garlic, pungent fish sauce, and the like. --Dana Jacobi

Boston restaurateur De Monteiro, who fled her native Cambodia in the mid-1970s, aims to both introduce and preserve traditional Cambodian cuisine in this appealingly unusual cookbook. Less sweet than Thai and not as salty as Vietnamese fare, Cambodian dishes make frequent use of lemongrass, fish sauce, shrimp paste, coconut milk, kaffir lime leaves and other local specialties. Classic Noodle Soup achieves part of its unique taste with preserved cabbage and dried shrimp. Dishes are as simple as Grilled Marinated Pork Ribs, made savory with mushroom soy sauce and garlic, and as complexly flavored as Caramelized White Fish with Fried Garlic. De Monteiro also tells how to make Crispy Rice, the deep-fried appetizer popular at her restaurant. Although many ingredients can be found in ethnic groceriesAgalangal, dried lily buds and the preserved fish paste, prahokAothers, such as banana blossoms for Banana Blossom Salad, will be difficult for Americans to locate. Less exotic, a dessert such as Sweet Sliced Corn puts a twist on a familiar U.S. food by slicing steamed corn off the cob, drizzling it with honey and garnishing with coconut, while New Year's Rice Treats with glutinous rice, coconut and bananas steamed inside banana leaves is an annually popular Cambodian sweet. Excellent in every way

If you love exotic cuisine and preparing it at home, then I would suggest that this book should be on the top of your list.

Just for starters, Cambodian cuisine is probably the tastiest of the SE Asian cuisines that I have tried. And what's more, the recipies are usually quite simple to prepare. I was surprised that some barely required anything beyond my neighborhood grocery store. Even for a back woods person like myself, getting some of the exotic ingredients required only a few stops on the web, and I was ready to cook anything from this book.

The cookbook is expertly laid out. It begins with a lengthy introduction, including everything from information on the history of Cambodia to the art of shopping in an Asian grocery store. The recipies are arranged in a pretty logical fashion: appetizers, meat type, noodles, and deserts. The last section covers the basic ingredients of Cambodian cooking which may be new to the western eyes. For someone coming from a small town, I had never used a lot of these ingredients. Even more handy about this book is the fact that there are many coloured pictures of the dishes and the exotic ingredients. If you've never shopped at an Asian grocery store, it's very useful to know what the product looks like, and Longteine de Monteiro also tells what exactly to look for when purchasing said items. Of course, the pictures really help so you know what type of result you want.

I'm really impressed by the amount of work that Longteine put into this book. Not only are the recipies great and it's loaded with information, it looks good too! The research was a bit exhaustive and the commentaries on each dish gave me some background or at least, entertainment.

Weaknesses of the book? Well, sorry to say, but I can't think of anything off the top of my head without really asking for too much (pictures of EVERY dish, for example). All around, this is a great cookbook, if not my favourite from my collection.

Great book - very complete

As my girlfriend is from Cambodia, I have looked for a source to learn to prepare some of the dishes her mother also makes, and I've managed to surprise her a couple of times with the mostly very authentic recipes that are in this book (not ALL dishes are perhaps uniquely or typically Khmer, but that does not change the merits of the book! (cfr. the other reader reviews)). The book is very complete, and a pleasure not only to use for cooking but also simply to browse and admire the pictures. For those who wish some extra sources of "authentic" khmer cuisine, I can recommend that they look for the book by Nusara Thaitawat (The Cuisine of Cambodia - I don't think it's on Amazon, but can be found on the internet) - they will find a great second book that also lists a large number of marvellous recipes, with equally exquisite pictures, but does presuppose some more familiarity with the ingredients and measures - which can be acquired by reading and using "The Elephant Walk" first.

Awesome Book! Buying one for my sisters!

I was very excited to recieve this book in the mail. I tried a few recipes and love them! I, like others have never been able to mimick my mothers Khmer dishes and my mother wasn't able to teach me well enough. I go by measurements and my mother goes by taste and experience. So this book made it easier for me to learn how to prepare Khmer meals for my growing family. I wanted to be able to serve my children meals that I grew up loving and this book helps me in every way. True it is a bit "Americanized" but it is better than what I haven't seen published out there. This is a must have for anyone who wants to learn how to cook these delicious dishes. I plan on purchasing a copy for my two sisters, who as well have been struggling to learn how to prepare our mothers meals.

A Great retelling of her flight from WW2 disrupted Korea, to the homeland in Japan

As a class in 7th Grade(1n 1992 or 93) we read this book and I was amazed at what Yoko her sister and mother had to do to flee Korea. I now have a 12 yr old daughter that I homeschool and I plan on having her read it as well. A superior and well told book. I also got to meet Yoko. What a sweet woman, I am thankful for the experience. I also just found she has another book called "My Brother, My Sister and I. I can't wait to read it! I believe this is a continuation of "So Far From the Bamboo Grove".

This interesting account of the 1991 Persian Gulf War by a Pulitzer Prize-winning reporter features a number of original observations about the conduct of the war. For example, Atkinson discloses that the Bush administration allowed navy warships to fire cruise missiles covertly over Iran against Iraqi targets. Among his other disclosures are the use of napalm and fuel air explosives on Iraqi infantry positions and the suggestion by Air Force Brig. Gen. Buster Glosson to use small nuclear weapons against Iraqi targets. Atkinson is extremely critical of Gen. Norman Schwarzkopf's behavior. Although Schwarzkopf is credited with being an accomplished military strategist, he is portrayed as someone who abused and publicly denigrated his subordinates and who appeared to be in a near-constant state of rage. Exhaustive, albeit consistently absorbing, record of the 42- day Gulf War that offers fresh, often startling, perspectives on the planning and conduct of what the author characterizes as ``a brilliant slaughter.'' Focusing almost entirely on military operations, Pulitzer- winning Washington Post correspondent Atkinson (The Long Gray Line, 1989) provides a chronological account of how the US-led coalition liberated Kuwait. In the course of doing so, he discloses that Stormin' Norman Schwarzkopf could be an imperious martinet given to volcanic rages that not only cowed subordinates but also disturbed superiors (including Defense Secretary Richard Cheyney), who considered relieving him. The author also includes new details on, among other matters, how Washington persuaded Israel to eschew retaliation for Scud strikes; the aerial assault on Baghdad's Al Firdes bunker (which killed over 200 civilians and led to restrictions on strategic bombing); the hit-or-miss efforts of allied navies to clear mines from important waterways; disputes between intelligence agencies as to damage assessments; secret routes flown by US missiles on their way to enemy targets; the command decision to halt a rout short of annihilation; and the post-ceasefire action that decimated a fleeing Republican Guard division. Atkinson's episodic narrative also affords a coherent log of the successful air/sea/land campaign to oust Saddam from Kuwait. He recounts the contributions of the hang-loose French and British contingents, and unobtrusively puts crucial Gulf engagements in clearer context with allusions to feats of arms from the distant and recent past. Still the definitive account of Desert Storm & Desert Shield

Atkinson's account of the Gulf War has managed to outdo every participant who has written about it. He does this by exposing every significant detail of the conflict. The aspects that most fascinated me include the negotiations with Saudi Arabia and Israel, the coverage of the military campaign (in the air, land, and sea), and the allied military personalities. Atkinson covers all of these angles - and more - as well as any other journalist/author. His style and professionalism is on a level with Bob Woodward (both are both Pulitzer Prize winners).
On all counts Atkinson is fair and thorough. Probably the best example of this is his portrayal of Schwarzkopf. More critical of his methods than the man himself, Atkinson summarizes, "Even for men who had seen horrific bloodletting in Vietnam, no Asian jungle was more stressful than the endless weeks they spent in Norman Schwarzkopf's Riyadh basement."
Still, this is not a book about Schwarzkopf. Everyone and everything gets their due coverage - cruise missiles of all kinds, scuds, Colin Powell and Dick Cheney, British special forces, the Israeli Defense Minister, Iraq's Republican Guard, and others. Again, the scope is impressive.
Except for any secrets that may be declassified in the future, "Crusade" is still the most comprehensive account of Desert Storm and Desert Shield. If you think you know everything there is to know about the Gulf War, you are guaranteed to learn something new from "Crusade."

Excellent history of Gulf War I reads like a novel......

13 years and two Administrations ago, the entire world watched as the first President Bush marshaled a global coalition to confront Iraqi dictator Saddam Hussein and gave him an ultimatum: leave Kuwait by Jan. 15, 1991, or we'll force you out. Three months had passed since Iraq had invaded its tiny but rich neighbor, claiming the Kuwaitis were slant-drilling into Iraqi oil fields just across the border.
In reality, as Rick Atkinson points out in Crusade: The Untold Story of the Persian Gulf War, Saddam was strong-arming his way out of repaying loans made to Iraq by Kuwait and other moderate Arab countries during his disastrous war with Iran. He may have also been angered by OPEC's lowering of the price of crude oil, which reduced badly-needed hard currency for his moribund economy. In a classic case of what novelist Tom Clancy calls "armed robbery writ large," Saddam followed Hitler's example of trumping up claims on a neighboring country, massing a huge army on its borders, then invading.
While Atkinson (The Thin Gray Line, An Army At Dawn) focuses on the events of the war itself, he carefully explains the almost Byzantine turns of American foreign policy toward Iraq. In the mid-1980s, Washington, worried that Iran would defeat Iraq, provided Baghdad with limited intelligence assistance and looked the other way when other countries (such as France, Brazil, and the USSR) sold Saddam sophisticated weapons. Only after the 1987 USS Stark incident, when an Iraqi Mirage "accidentally" fired an Exocet missile at a U.S. frigate in the Gulf and killed and injured several sailors, did U.S. policymakers start looking at Saddam as a potential adversary. But until 1990, official policy in Washington was to try to coax Baghdad into joining the fold of civilized nations in the so-called post-Cold War "new order."
In fact, as Atkinson points out, Washington's desire to establish better trade and diplomatic relations may have given Saddam the "green light" to invade Kuwait. The White House, for instance, censured the Voice of America for airing reports about Iraq's repressive government, and Ambassador April Glaspie's comment in July 1990 that the U.S. had no intentions to intervene in "Arab-Arab" disputes further reinforced the Iraqi dictator's view that America was a post-Vietnam "paper tiger" and would not lift a finger to help the Sheik of Kuwait.
Crusade is intensely fascinating and detailed. It is incredibly well-written, enabling the reader to get both the Big Picture and see the war through the combatants' point of view. It's no exaggeration to say that it reads like a Clancy novel; we get not only personality sketches of H. Norman Schwarzkopf, the "CINC" of Central Command and overall commander of Desert Storm and his chief lieutenants (Charles Horner, "Buster" Glosson, Cal Waller, Fred Franks), but we also get vivid descriptions of the intense aerial and ground battles that became known as Operation Desert Storm.
Atkinson also deals with the unexpected aftermath of the Persian Gulf War -- the short period of national high-fiving after the liberation of Kuwait that gave way to disillusion. In a matter of months, President George Herbert Walker Bush went from being a popular wartime leader to being booted out of the Oval Office in the 1992 election. Saddam Hussein, meanwhile, crushed not one but two post-war revolts (encouraged but not supported by President Bush) and withstood nearly 12 years of sanctions and sporadic air and missile attacks as he defiantly thumbed his nose at three American Presidents. (Now that he's in U.S. custody, maybe he isn't feeling so cocky, but that's another story.)

My Highest Recommendation

In my opinion, Atkinson surpasses Stephen Ambrose as military historian extraordinaire, and I'm an Ambrose fan! From the moment I read the first paragraph of the first page of this book, I thought, "Wow, Atkinson can write!" The work was gripping throughout, and read like a novel. No wonder Atkinson won a Pulitzer for his previous work: he has an amazing gift for conveying historical fact in captivating prose. Equally amazing is the amount of research that went into this tome: a glance at the endnotes is sufficient to know that this book must have consumed Atkinson's life for several years. Along with Ambrose's "Band of Brothers" and Antony Beevor's "Fall of Berlin 1945," I would say this is the best work of military history that I have read . . . in fact, I would rank it first with Beevor's "Berlin" book. And you don't need to be a soldier to understand the book; it's clearly devised, with explanations for the layperson, and the maps are incredible. My only wish while reading the book was for a supplement that showed, for example, what an F-111 looked like, so that I wouldn't confuse it with an F-117; but this is my only criticism, and a minor one at that. You can always look up such weaponry on the Internet. Now I can't wait to read Atkinson's "An Army at Dawn," which I have waiting on my bookshelf!

If American diplomacy can seem confusing to foreigners, that is because it partakes of eight different traditions, suggests Pulitzer Prizewinning historian McDougall (Univ. of Pennsylvania; Let the Sea Make a Noise, 1993, etc.) in this perceptive study. The eight traditions that McDougall explores are American exceptionalism, unilateralism, the American System, expansionism, progressive imperialism, Wilsonianism, containment, and global meliorism. McDougall is at pains to correct what he sees as misreadings of the history of American foreign policy. He argues that the hallmark of that policy in the 19th century was not isolationism but unilateralism--in other words, avoiding permanent alliances that could endanger domestic liberty, and intervening only when vital American interests were at stake. McDougall also undercuts revisionist historians' claims that the American acquisition of territory after the Spanish-American War was an imperialist grab, arguing instead that it was a measure taken to prevent foreign attempts to gain bases that could endanger America. He offers particularly trenchant criticisms of Woodrow Wilson for opening the door to messianic foreign interventions, and of Bill Clinton for extolling multiculturalism and diversity at home while having ``no tolerance of them where other countries were concerned.'' McDougall agrees with the opposition of Henry Cabot Lodge and Theodore Roosevelt to Wilson's Treaty of Versailles, crediting their opposition more to principled defense of American sovereignty than to implacable partisan and personal opposition to the president. Above all, he convincingly argues that sacrifice for foreign clients, whether through LBJ's global social-welfare schemes or Clinton's appetite for nation-building, has financially and morally bankrupted the US. An interesting essay on America's foreign policy traditions

McDougall identifies 8 different traditions in American foreign policy, which fall into two "testaments." The "old testament" consists of traditions such as liberty, unilateralism and the American System. Essentially, it involves Americans perfecting their own country and looking towards their own part of the world as the place they need to be most concerned. The "new testament" consists of such traditions as containment, expansion and meliorism. It calls for American to play a much broader role in the world's affairs, although for different reasons. McDougall does not purport to have written a comprehensive diplomatic history as to explain it and how it might be used to conduct future diplomacy. "Promised Land" is not highly ideological - some will find his questioning of the Marshall Plan's success and attack on foreign aid infuriating. Others will be unhappy with his assertion that the US is perhaps well served by its participation in the UN and Nato, as long as the USs ability to act unilaterally when necessary is not impeded. For example, he points out that Washington's famous injunction was against "entangling alliances" rather than all alliances and that those which serve the US interest without limited its freedom of action are consistent with Washington rather than opposing it. In perhaps the most interesting "revision" of the entire book, he repudidates the notion that America has ever been an isolationist nation, saying that it really was a concern for our ability to act unilaterally that was at issue and points to a long history of interventionism to protect US interests dating back to Jefferson and the Barbary Pirates. Finally, the book explains the role of religion in the changing nature of America's policies from that of a promised land where we would lead by example primarily to one where we would be more willing to intervene.

America's varied doctrines of dealing with the world

I first saw Walter McDougall on the C-SPAN Booknotes show discussing this book in 1997. He impressed me so much that I went online and ordered it from Amazon instantly. It is a great read because McDougall writes clearly, concisely, and with a rare vividness for a scholar.

This is not a book of American History per se. It is a book about American's developing and changing doctrines of how to deal with the world beyond our borders. McDougall discusses eight doctrines with four under the "Old Testament" heading (when America was basically turned inward and worried only about the Western Hemisphere), and four under the "New Testament" (when America became a player on the world stage and, briefly, a colonial power).

Understanding these doctrines is essential to understanding America's changing place in the world. These doctrines conflict with each other and yet the all still echo through history to our present. This leads to some of the complexity in our present political relationships with the world and our own muddled sense of ourselves and our role in the world. Certainly, America has done some wonderful things for the world, but the wake of our great ship of state has also made navigation tough for some of the smaller barks trying to stay afloat in the storms of history.

This is a fine book and a great read. I encourage everyone, especially students and young people, to read it carefully and to consider seriously the arguments Prof. McDougall has put forth. You will be better off whether or not you end up agreeing with him.
